I would like to find a plan for a lobster boat who could carry something
like a ketch sail and a stay sail.
i don't like the look of the ordynarie motor sailer and tought building
a boat that would look like a lobster boat with a large cockpit but
could carry sail when the wind is good. Don't know if it's possible

Why not? You will need keel area, and a large rudder. A long
keelson a foot deep might do, or leeboards. Leeboards might be
best, their angle of attack could be adjustable.

You will need a sizeable mast. Consider an "A" frame made from
longline outrigger gear, with forestay and backstay only. You
would set only stays'ls without booms, or hoist a dipping yard.

If racing, you will want to start a class association, and get
generous handicap ratings. You will need them.
