Displacement is the weight of the boat itself plus the weight of the
assumed "typical" cargo (passengers, supplies, etc.).

If you want the boat to float at the designed waterline, then the maximum
cargo is the displacement minus the weight of the boat itself.
The boat can carry more, but then it will float deeper, which is
undesirable.

The displacement of a boat is the amount of water she displaces -
which is equal to the total weight of the boat and everything in her.
The payload of a boat is the difference between her dry weight with
all equipment - that is the weight of the hull, masts, sails, rigging,
ground tackle, engine, sterngear, interior fittings, etc and her
design diplacement.

the word I've most often seen is "capacity" to distinguish load from
displacement

That sounds like a better term. Definitions of what a "ready to sail" boat
vary a bit too. I think most common is the weight of the boat and running
gear, full crew and rations, half fuel...or something like that. Can't
remember. In any case, the capacity is the max displacement minus the
"ready to sail" weight.
