3 of the ribs on my Nautiraid kayak are broken and the cost to replace them
is over 300$. 2 of the ribs I've already replaced with regular home-depot
plywood but in the form of a solid board - the center isn't cut out because
the wood isn't strong enough alone, but I'd like it make actual ribs. The
original ribs are like 16 ply plywood.

Have any suggestions on what material I could use to make new ribs that
would stand up to the stresses of tight assembly / disassembly puts on the
piece?

You might consider using HDPE (the material cutting boards are made of).
That's what's used to build the boat at www.yostwerks.com

Wow thanks!, that would be a great material - light, semi-flexible, strong,
and easy to slide into a tight place. From a quick search it looks like it
might be hard to track the stuff down though.

Look in your phone book under "plastic". You may have a plastic supplier
nearby and not know it.
